- To make the meatballs: Combine the quinoa, quorn and turkey mince in a bowl.
- Add the chilli flakes, 1 chopped garlic clove, breadcrumbs, 1 chopped onion. Bring everything together, moulding into small balls, approx. the size of a golf ball (size is up to you).
- Place the meatballs in a large baking tray & bake in the oven on Gas mark 6/400F/204C for 10 mins. Drain off the fat and turn the balls. Cook for a further 10 mins.
- While the meatballs are baking, fry the other onion, garlic clove & peppers (if using) until softened.
- Add the mixed herbs, tinned tomatoes, stock pot and season with S&P. Simmer gently while cooking the pasta in a separate pan.
- Combine the tomato mixture with the pasta. Pour the tomato pasta mixture into the baking dish with the meatballs.
- Top with dollops of natural yoghurt, evenly distributed around the dish (these serve to replicate mozzarella). Grate cheddar over the top & season with S&P.
- Return to the oven until the cheese melts and begins to turn golden.
- Serve with a large salad full of SW speed.
