Instructions to make Kolhapuri Modak Curry:
- For modakš„Take a plate add Gram flour, salt, 1/4 spoon turmeric powder, 1 Tbs oil make a dough with. Medium Consistency. Add more oil if needed. Rest it 15 minutes.
- Take a pan add 1 tbs oil add heeng pinch, add Cumin seed, add ginger chopped, and garlic saute it until turn brown.
- Add sliced onions and Peanut, dedicate Coconut cook 2 minutes stir continuously. Add sesame seeds stir continuously cook 1 more minute.

- Make 5 modak.*modak outer layer is not thick or not thin. Medium type.
- For gravy- take a kadai add 2 tbs oil,add heeng,Cumin seeds and green chilli,curry patte mix it.add coriander powder goda masala, then add above remain masala mix it on low flame add water 1 cup bring to boil sim the gass add salt if desired. Add gram masala now put Modak and simmer gas and covered it and cook for 5 minutes. Garnish with green coriander leaves.
- Daal makhni - wash Udad daal & Rajma 4-5 times rubbing with hand.and soaked overnight.
- Take a pressure cooker add soaked daal add salt and 2 Tbs deshi ghee.take 6-7 weisel.
- In blender take onion and tomatoes a d garlic and 1 inch ginger make a paste.
- Take a kadhai add 4tbs deshi ghee or unsalted butter. Add Cumin seed add 1 bay leaf,4-5 cloves,and black pepper, 1stick cinnamon stick quickly stirring.
- Add tomatoes puree and add salt,chili powder, add boiled daal cook it on medium flame. Cook 20-30 minutes on sim flame.add butter mix it serve with Naam or paratha.
