- Steam the eggs in a steamer or rice cooker for 15-20 minutes. Remove and keep it immersed in cold water for 5 minutes.
- Remove the shell of the eggs and make cuts in eggs or prick it with a fork. Add turmeric powder, Kashmiri red chilli powder and salt. Mix well and keep it aside.
- In a blender, add onion, green chillies, coriander leaves and mint leaves and blend to a smooth paste without water. Keep aside.
- In a bowl, add curd, kashmiri red chilli powder, coriander powder, cumin powder and black pepper powder. Mix it well and keep aside.
- Heat 2 tablespoons oil in a pan. Add the eggs in hot oil. Fry for 2-3 minutes on medium flame. Off the flame and keep it aside.
- Heat 4 tablespoons oil in a pan. Add bay leaves, cinnamon, black cardamom and cumin seeds.
- Reduce the flame to low and add turmeric powder and Kashmiri red chilli powder. Mix it.
- Add the blended paste. Keep stirring. Cover and cook for about 8-10 minutes.
- Next add the ginger garlic paste and mix well.
- Cover and cook for a minute or two. Now off the flame. Cool the masala.
- Once the masala cools down, add the curd mixture. Mix it well.
- Now turn the flame on and cover and cook for about 8-10 minutes. Add salt. Remember that we have added salt to the eggs.
- Add a cup of water and mix it well. Add the fried eggs in the curry. Cover and cook on low flame for about 6-8 minutes.
- Add garam masala powder. Mix it well in the curry and cover and cook for 2 minutes.
