- Provide 3/4 cup Cauliflower
- Take 1-1/2 cup Carrot..
- Get 3/4 cup french beans, ,
- Take Finely chop, blanch & crush these above vegetables
- Prepare 1-1/2 cup Green peas .
- Take 5 Green chillies chopped
- Prepare 4 . Potatoes medium (boiled, peeled & mashed)
- Provide 1 tsp Red Chilli Powder
- Provide 1 cup Breadcrumbs
- Prepare as needed Oil for deep frying.
- Take FOR GRAVY….
- Get 4 tbsp Oil
- You need 2 tbsp Ginger , finely chopped.
- Get 2 Green cardamons
- Get 2 tsp Cumin seeds
- Use 200 grm, Bottle gourd peeled, cut in to cubes & boiled.
- Use to taste. Salt
- You need 2 tbsp Coriander powder
- Take 1/2 tsp Cumin powder
- You need 1 cup Fresh coriander leaves chopped
- Provide 2 tbsp Butter
- Get 1" sticks Cinnamon
- Use 1 cup Fresh cream
- Get 10 Black peppercorns
- You need 200 gm Red pumpkin, peeled, cut in to cubes & boiled.
- Prepare 15 Ceshew nuts roasted
- Provide 2 tsp Red Chilli Powder.
- Get 1/2 tsp Turmeric powder
- You need 1 tsp Garam masala powder ,
- You need 1/2 cup . Fresh mint leaves
- Get 1 cup Tomato puree
Instructions to make Vegetable (mix) kofta curry..:

- In a bowl add mixed vegetables, boild crushed potato, chopped green chillies, chopped ginger, red chilly powder & salt to taste. Mix well & make a dough. Make a small equal balls, give round shape like koftas.

- Heat oil in a pan & fry these koftas. Keep aside.

- In a grinder add this mixture & make a fine paste adding little water. Strained through strainer. Keep aside.

- Heat oil in a pan add cinnamon, green cardamoms, black peppercorns & cumin fry till fragrant. Add red pumpkin, bottle gourd, roasted cashew nuts red chilly powder, cumin powder, turmeric powder & garam masala powder & saute. Add fresh coriander leaves & mint leaves, mix well. Cook for 1 mnt. Cool it.

- In a serving dish add gravy & koftas. Serve hot

- Heat butter in a pan add add tomato puree cook for sometime. Add paste, boiled & cook on medium heat for 2-3 add salt to taste & saute. Add fresh cream, mix well.
