The ingredients needed to prepare Chinese vegetable soup:
- You need 1 Chinese cabbage
- Take 4 sticks spring onions
- Get 1 large carrot
- Prepare 2 vegetable stock cubes
- Prepare 1 teaspoon salt
- You need 1 bunch coriander
- Use 1 packet firm tofu
- Provide 1 chunk of ginger
- You need Half a teaspoon of corse black pepper
Steps to make Chinese vegetable soup:
- Chop the veg up. Make sure the carrots and ginger are nice and thin.
- Cut the tofu in to cubes about 2cm squared.
- Get a large pan and put around 1.5 litres of water in, along with the ginger. Keep on a medium high heat.
- After a few minutes add the carrots and Chinese cabbage.
- Then add in the salt and vegetable stock cubes and pepper then mix.
- After about 10 minutes the vegetables soften, this is when you add the tofu.
- The tofu won't need long, it just needs to warm through, (around 5 minutes) just before serving put in the spring onions and coriander, so that they don't overcook.
