- Provide Left over vegetables (what ever you have)
- Take 2 quart chicken stock, from cubes etc is fine
- Take 2 potatoes, peeled and thinly sliced

- Chuck the vegetables into a saucepan, add stock. N.b. an English quart is 40 fl oz not 32!

- Bring back to boil, stirring constantly, it sticks and burns, very quickly. Check seasoning and add salt and pepper to taste, I like lots of black pepper!
- Serve. You can drizzle in cream or creme fraiche, add croutons
- The soup pictured contained roast potatoes, candied sweet potatoes, peas, sweetcorn, carrots, broccoli and greens. You can make from scratch with fresh vegetables but it doesn't taste as good.
