- Get 1 cardamom
- Provide 1 cup mix vegetable stock
- Prepare 1/2 cup boiled & chopped carrots

- Prepare 3-4 tbsp ghee
- Prepare 1 cup milk
- Get 1 tsp black pepper powder
- Use 2 tbsp spring onion (green part) - for garnish
- Prepare as per taste Salt
Instructions to make Walnut Paneer Soup:
- Melt 1 tbsp ghee in a pan. Add 1 cup paneer (cut in cubes) & roast it slightly. Once roasted remove from flame & keep aside.
- Melt 1 tbsp ghee in same pan. Add 1 cup chopped walnuts & roast it slightly. Once roasted remove from flame & keep aside.
- Melt 1 tbsp ghee again. Then add all the whole spices & saute. Then add 1 cup mix vegetable stock.
- Add 1 tsp black pepper powder, 1 tsp sugar & salt as per taste. Mix, cover & let it boil.
- Let it cool. Once cooled remove all the whole spices.
- Add 3/4 th of the roasted walnuts to a mixer. Then add the vegetable stock & blend well.
- Add this blended mixture to a pan. Then add 1/2 cup boiled & chopped carrots. Add 3/4 of the roasted paneer cubes.
- Let it boil. Once boiled, add 1 cup milk. Cover & let it simmer.
- Remove from flame. Pour the soup in the serving bowl. Add the remaining 1/4th roasted walnuts & paneer cubes, garnish with spring onions & serve hot.
