- Provide 2 Tbsp water to rehydrate Shiitake powder

- Use 40 ml Mirin
- Provide 60 ml soy sauce
- Provide 15 g brown sugar
- Take 1 tsp grain vinegar
- Provide Udon noodles for two people

- Soak the Kombu for up to 30 minutes in water to soften.
