Before you jump to La Paz Road Bean Soup recipe, you may want to read this short interesting healthy tips about Choosing Healthy Fast Food.
Just about any article you read about bettering your health or slimming down is going to tell you to ignore the drive through and cook all of your meals instead. There’s some value to this. But at times the last thing you would like to do is prepare a whole meal for yourself and your family. Once in a while you need to pay a visit to the drive through when you are on your way home and end the day. Why shouldn’t you have the ability to do this every so often and not have a bunch of guilt about slipping up on your diet program? You are able to do this because lots of the popular joints are now advertising “healthy” menu selections to keep their businesses up. Here is the way to eat healthy and balanced when you reach the drive through.
Choose the drive through according to whether or not it has better options available. Arby’s for example, isn’t going to provide burgers. Instead, the choices consist of roast beef and chicken sandwiches, wraps and big salads. Wendy’s, whilst no stranger to the hamburger, also includes a lot of alternative meal choices: large salads, large baked potatoes and other tasty items fill its menu. Not all fast food spots are as unhealthy as McDonalds with its deep fried every little thing.
Logic claims that one the simplest way to stay balanced is to bypass the drive through and never eat fast food. While, for the most part, this is a good idea, if you make intelligent choices, there is no reason to feel guilty for visiting a drive through one or two times a month. Sometimes the thing you need most is just to have someone else do the cooking. If you choose healthy things, the shame usually associated with hitting the drive through shouldn’t be so bad.

- You need 1 tbsp EV olive oil
- Take 2 diced carrots, amount divided in half
- Provide 1 stalk celery, diced
- Provide 1/3 medium yellow onion, diced

- Use 1 cup fresh shelled cranberry beans (or canned bean, like cannellini – if using, drain first)
- Prepare 2 quart water or enough to cover the beans by ~ 1.5 inches)
- You need 1/4 red onion, diced
- Use 1 small tomato, chopped
- You need 1 medium diced zucchini
- Take 1/4 cup wheat, corn or rice small pasta – shells or elbows
- Get 1 pinch dried lemongrass (trust me!)

- Prepare 1 Black pepper, to taste
- Use 1 pinch crushed red pepper, optional!
Steps to make La Paz Road Bean Soup:
- Soften half the carrots, all the diced yellow onions and celery in the EVOO. When translucent, add rosemary and the beans, and cover with ~2" water. Let simmer for 45-minutes to 1 hour, until the beans are soft and the liquid is thickened from the beans.
- Add the remaining carrot, tomato, and zucchini, diced, to the pot and let simmer for an additional 15-20 minutes. When vegetables are tender, add the small pasta and the final seasonings – red crushed pepper, soy sauce and lemongrass. When the pasta is tender, it?s ready to serve.
- I also add a twist of two of dried porcini mushrooms from my grinder, but if you don't have it, don't worry. Fresh mushrooms don't really work well here.
