- Use stuffed peppers
- Take 8 large bell peppers, I like red or orange
- Get 1 lb lean ground beef/ 93% or leaner
- Take 1 packet knorr brand spanish rice
- You need 1 1/4 cup frozen corn, thawed
- Use 1 1/2 cup black beans, fresh or canned
- Prepare 1 garlic clove, minced
- Take 1/2 cup white onion, finely chopped
- You need 1 dried ancho pepper
- Take 1 tsp salt
- Provide 1 tbsp olive oil
- You need 1 tsp chili powder
- Take 1 tsp smoked spanish paprika

- Fill each pepper with the meat mixture. Cover with tin foil and bake at 350°F fahrenheit in a preheated oven.
