The ingredients needed to make Boiled Tripe:
- Take 1 kg tripe (ebyenda, in one of the local languages in Uganda)
- Get 4 well ripe tomatoes
- Take 2 medium size onions
- Prepare 1 large carrot
- Take 1 large green bell pepper
- Use 2 tbsp royco
- Prepare 2 medium size aubergine(peeled, they help thicken the soup)
Instructions to make Boiled Tripe:
- Wash the tripe thoroughly, cut into desired sizes. Was again.
- Put in a cooking pot (I use a pressure cooker, boil for 1 straight hour ( my favourite kitchen gadget 😊)
- Whilst you are cutting your veggies, royco and other spices/ herbs of your choice. add them to your ready tripe, cover and allow to boil once again for 30minutes or more.
- Serve with mashed matooke(like I did), posho (ugali), or whichever accompaniment you prefer 😊.
