Before you jump to Chicken Tortilla Soup recipe, you may want to read this short interesting healthy tips about Finding Healthful Fast Food.

Almost every “get healthy” and “weight loss” article you study will tell you to skip the drive through and make all of your meals yourself. This is actually very true. From time to time, though, the last thing you want is to have to prepare an evening meal from scratch. Once in a while you just want to visit the drive through while you are on your way home and complete the day. Why shouldn’t you be capable of do this every now and then and not have a bunch of guilt about slipping up on your diet regime? This is because many of the famous fast food restaurants around are trying to “healthy up” their selections. Here is how you can find healthy food at the drive through.

Choose your drive through depending on whether or not it has better options available. For example, Arby’s does not offer hamburgers. You may consume roast beef sandwiches, wraps and salads as a substitute. Wendy’s, of course, is known for its square burgers, but the menu there has a considerable amount of healthy choices like salad, potatoes and chili. Not many fast food places are as unhealthy as McDonalds with its deep fried every little thing.

Logic says that one the simplest way to stay balanced is to bypass the drive through and never eat fast food. While this is usually a good idea all you need to do is make a couple of good choices and traveling to the drive through isn’t anything to worry about–when you do it in moderation. Occasionally, allowing someone else cook dinner is just what you require. If you decide on healthy products, the guilt usually associated with hitting the drive through shouldn’t be so bad.

  19. You need 1 avocado, diced
  20. Provide 1 lime wedges
  21. Use 6 oz queso panela, crumbled
Instructions to make Chicken Tortilla Soup:
  1. Pull apart the pre-roasted chicken into bite sized pieces and set aside. I like to do this first because it gets a bit messy. Prep all the ingredients before you start cooking. Reserve a handful of chopped onion and hand full of chopped cilantro for garnishing the top of the soup.
  2. In a large pot, heat the oil over medium high heat. I like to use coconut oil but you can use whatever you like. Add half the tortilla strips and cook, continuously stirring, until golden (about 1 minute). Remove the cooked strips with a slotted spoon and place on paper towel. Repeat with the remaining half of the tortilla strips.
  3. Using the same pot, reduce the heat to medium. Add the chopped onion, chopped garlic cloves, chopped chipotles, and spices to the oil. Cook, stirring, for about 5 minutes, or until onions are tender.
  4. Add the chicken broth, crushed tomatoes, bay leaf, and chicken. Add the salt. Simmer for 20 minutes. Add the cilantro, diced tomatoes, black beans, and corn. Return to a simmer for 10 more minutes. Taste the soup, you may want to add more salt. Remember you can always add to the recipe, but oversalted food is just gross. Before you serve, remove the bay leaves.
  5. To serve, put tortilla strips in a bowl, and pour in the soup. Sprinkle crumbled queso panela, cilantro, diced avocado, and chopped onion on top, and serve with lime wedges.
