Before you jump to Meatballs and Roasted Veg Skewers recipe, you may want to read this short interesting healthy tips about Finding Nutritious Fast Food.

Almost each and every “get healthy” and “weight loss” posting you read will tell you to skip the drive through and make all of your meals yourself. This is really very good advice. But occasionally the last thing you would like to do is make a whole dinner for yourself and your family. Once in a while you need to visit the drive through while you’re on your way home and complete the day. There is simply no reason that you simply shouldn’t be able to make it happen once in a while and be free of the guilt usually associated with “diet slips”. This is because most well-known fast food restaurants out there are trying to “healthy up” their selections. Here is how you can find healthy food choices at the drive through.

Aim toward the side dishes. Not that long ago, the only real side dish item at a fast food restaurant was French fries. Now virtually all of the popular fast food places have widened their menus. Now lots of them provide salads. Chili is definitely another option. You might get baked potatoes. You can make fruit. There are countless possibilities that you can choose that do not force you to ingest foods that have been deep fried. Instead of the pre-determined “meal deals” try to build a meal from side dishes. You’ll keep calorie and fatty food count lower and stay away from time and effort.

Logic states that that one the simplest way to stay healthy and balanced is to avoid the drive through and never eat fast food. While this is usually recommended all you need to do is make a few good choices and visiting the drive through isn’t anything to worry about–when you do it in moderation. Sometimes what you need most is just to have another person do the cooking. When you select healthful menu items, you do not have to feel bad about visiting the drive through.

We hope you got benefit from reading it, now let’s go back to meatballs and roasted veg skewers recipe. You can have meatballs and roasted veg skewers using 10 ingredients and 6 steps. Here is how you achieve that.

The ingredients needed to prepare Meatballs and Roasted Veg Skewers:
  1. Use 250 g lean beef mince meat
  2. You need 1 egg
  3. Use 2 Tbsp breadcrumbs
  4. Take 1 courgette
  5. Prepare 1 aubergine
  6. Take 6/8 cherry tomatoes
  7. Get 1 can tomato sauce (passata)
  8. Get 1 clove garlic
  9. You need To taste Salt, pepper, and your favourite herbs
  10. You need 6 Skewers
Instructions to make Meatballs and Roasted Veg Skewers:
  1. In a large bowl, mix the mince meat, pinch of salt and pepper, your favourite herbs (I used garlic powder, onion powder, dry rosemary and sage) and the egg - work it with your hand until smooth. If it's too wet, gradually add breadcrumbs until it is the right consistency to form meatballs. I got 18 little meatballs out of my mixture.
  2. Slice the courgette and the aubergine in 1 cm slices (I peeled my aubergine because my husband is fussy, but there is no need for that!), then halves the little cherry tomatoes. Grate the garlic and reserve for later.
  3. In a medium pan, first cook your meatballs (you shouldn't need any oil as they will release a bit of their own fat, and won't go dry, but make sure you turn them regularly). When ready, remove them from the pan and keep them warm. In the same pan, cook your slices of aubergine and courgette. Add salt and pepper to taste.
  4. Meanwhile, prepare a basic tomato sauce using the garlic, the "passata" sauce, salt and pepper.
  5. When the veg are ready, remove them and keep warm, then add the half tomatoes, but only for 1 minute or so, just to soak up the juices and become a little tender. You are then ready to build your skewers: chop each 1cm veg slice in 4 cubes, and proceed to put each 1 element on the skewer, alternatively.
  6. Make a bed with your tomato sauce, and serve the skewers on top of it, and don't forget some fresh crunchy bread to clean the plates afterwards! ;)
