- You need 300 gms Arbi
- Get 1 Onion
- Get 3 Tomatoes
- Take 1-2 Green Chillies
- Prepare 1/2 Big Spoon Mustard Oil
- Use 1 Pinch Hing
- Take 1 Table Spoon Ginger Garlic Paste
- Get Leaves Some Dhaniya
- Get Panchforon Masala
- Take 1/2 Tea Spoon Saunf
- Take 1/2 Tea Spoon Jeera
- Take 1/2 Tea Spoon Methi Dana
- Take 1/2 Tea Spoon Kalunji
- You need 1/2 Tea Spoon Sarson
- You need Spices
- Take 1/2 Tea Spoon Haldi Powder
- Use 1 Tea Spoon Salt
- Provide 1 Tea Spoon Laal Mirch Powder
- Get 2 Tea Spoon Dhaniya Powder
- Get 1 Tea Spoon Amchoor Powder
- You need 1 Tea Spoon Garam Masala
Steps to make Arbi Masala Curry:
- Wash Arbi Properly, peel off its skin & cut it into shape of circles & then again wash it properly.
- Chop Onions very finely, grind tomatoes, green chillies & Ginger garlic paste into purée in a mixer grinder.
- Now take pressure cooker, add 1/2 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first.
- When smoke starts coming out of oil turn off the gas & let the oil cool down a bit.
- After some time, again turn on the gas & keep the gas on medium flame.
- Then add panchforon masala, 1 Pinch Hing in it & let them sizzle.
- When they start sizzling, add finely chopped onion in it & cook them till they become golden brown in colour.
- When they are 60-80% cooked, add 1/2 Teaspoon Haldi Powder in it & roast them for 30 seconds.
- Then add finely grinded tomato purée in with 1 Teaspoon Salt so that they start releasing oil quickly.
- After 5-6 minutes, when oil is completely released, add spices mix in it & roast them for 2-3 minutes.
- After 2-3 minutes, add chopped Arbi Dices in it & roast them for 4-5 minutes.
- After 4-5 minutes, Add 1.5 Cup Water in it, close the lid & give 3 whistles on medium flame.
- After 3 whistles, turn off the flame & let the pressure cooker depressurise naturally.
- After some time, open the lid, add 1 Teaspoon Garam Masala in it & mix them properly.
- Your Arbi Masala Curry is ready to be served.
