  1. Provide 500 grams Chicken small curry cut pieces with bones
  2. Take For Marination:
  3. Take 1 tsp Salt
  4. Use For Onion tomato chilli paste:
  5. Prepare 2 medium Onion medium sized sliced and slightly fried
  6. You need 2 Tomatoes small
  7. Prepare 2 Green chillies small
  8. Get 2 tsp Curd/yogurt
  9. You need 12 Cashew nut paste
  10. Use 2 tsp Ginger garlic paste
  11. Use 2 cups Methi/fenugreek leaves,approx 50 gms leaves picked (to be pan fried and set aside)
  12. Prepare 1/4 tsp Turmeric powder
  13. Provide 1/2 tsp Red chilli powder
  14. You need 1 tsp Coriander powder
  15. Use 1/2 tsp Cumin power
  16. Use 1/2 tsp Garam masala powder
  17. You need 1 tsp Oil for frying onions/methi leaves
  18. Get 3 tsp salt for Seasoning
Instructions to make Methi chicken:
  1. Preparation:Wash, drain and marinate the chicken with salt, turmeric powder and red chilli powder,set aside for 30 mins. Pick the methi/fenugreek leaves. Wash a few times and drain the water,slice the onions,cut the tomatoes into quarters and the green chillies to halves.make a paste of the cashew nuts.take a pan,heat a tsp of oil and add the onions.fry on medium heat for 3-4 mins till translucent.take out,drain the oil and set aside to cool.In the oil left off the pan,add the washed and drained
  2. Methi leaves and fry on medium heat till the methi is cooked but still retains the colour. To make the onion-tomato chilli paste, take a blender and add the lightly fried onions, quartered tomatoes, green chillies and 2 tsp of curd, blend to a rough paste.
  3. Process: Heat oil in a pan or a kadhai and add the Ginger garlic paste.Fry on medium heat for 2 mins.Add the tomato-onion chilli paste,mix and fry on medium heat for 2-3 mins till oil separates. Reduce the heat to low and add all the spice powder other than garam masala powder.Mix well and cook for 5 mins on low heat till oil separates. Now add the marinated chicken, mix everything well and fry on high heat for 3-4 mins.Add the garam masala powder, mix and fry on medium heat for around 10 mins.
  4. Add the Cashew paste and the fried methi leaves and mix everything well. Cook on low heat for around 5 mins till oil separates. Add half cup of water, mix well and cook covered on low heat for around 15 mins. Serve hot with rice/roti.
