The ingredients needed to make Chicken Rice & Feta Soup:
  1. Prepare 1 small onion, minced
  2. Use 2 stalks celery, minced
  3. Prepare 1 clove garlic, minced
  4. Get 2 tbsp olive oil
  5. Prepare 1/3 cup jasmine rice (uncooked)
  6. Provide 5 cup chicken broth
  7. Get 1/4 tsp basil
  8. Take 1/4 tsp oregano
  9. Use ground black pepper
  10. Prepare 1/2 lemon (just the juice)
  11. You need 1 1/2 cup cooked chicken (see Note)
  12. Prepare 1/3 cup feta cheese, slightly crumbled
Steps to make Chicken Rice & Feta Soup:
  1. In a large pot over medium heat, sauté the onion and celery in olive oil for 2 minutes. Add the rice and continue cooking until the rice has browned slightly. Stir in the garlic and cook an additional minute.

  3. Stir in the chicken pieces and continue cooking just until the chicken is warmed through, about 5 minutes.
  4. Remove from heat and stir in the lemon juice and feta cheese. Serve immediately.
  5. NOTE: For this recipe, I use a rotisserie chicken from the deli. After removing the meat, I make a rich chicken broth from the carcass. I use about half the meat from the rotisserie chicken in this recipe, chopped into large pieces.
